Apple Goat Cheese Salad

Fresh greens, crisp apples, dried cranberries, goat cheese, and crunchy mixed nuts come together perfectly in this salad. An easy and pleasing side dish for any meal!

Ingredients:
8 cups baby mixed greens
1 red apple
1 green apple
1 cup unsalted mixed nuts, crushed (you can also just do crushed pecans or walnuts but I like them mixed)
75 grams crumbled goat cheese (I used 1/4 chunk of Kirkland brand goat cheese)
1/3 cup dried unsweetened cranberries
Dressing:
1 cup natural apple juice
4 tbsp apple sider vinegar
2 tablespoons natural honey
1/2 tsp salt
1/2 tsp black pepper
1/4 cup olive oil
INSTRUCTIONS
Core and chop apples into small cubes. Toss lettuce, apples, chopped nuts, goat cheese, and cranberries together in a large bowl.
Whisk together all dressing ingredients. Toss with salad immediately before serving.
If you plan to use this recipe for meal prep then it's important to have the dressing on the side in a separate container so the salad doesn't get soggy.
This recipe can easily be doubled for more servings!
